Classic Egg Salad Sandwiches

Egg Salad Recipe
When it comes to egg salad, you either love it or you don't, but if you like deviled eggs you need to try this recipe.
Prep Time 10 minutes
Total Time 10 minutes
Ingredients
- 12 Eggs
- 1/2 Cup Mayo
- 2 Teaspoons Yellow Mustard
- 1 Teaspoon White Vinegar
- 1/2 Teaspoon Paprika
Instructions
- Hard boil and when cooled, peel eggs.
- Slice or chop hard boiled eggs into bite sized pieces and place in a mixing bowl.
- Add in the mayonnaise, yellow mustard, white vinegar and paprika and combine.
- Add salt and pepper at your taste discretion.
- Serve up on your favorite bread as sandwiches or place in an airtight container in the refrigerator.
Egg Salad BLT Sandwiches
This was a random concoction we discovered by accident but now it’s one of my son’s favorites. Add egg salad to your BLT in lieu of the mayo and elevate your BLT to a whole new level. Bonus, it’s a great way to use up those leftover hard boiled eggs.
Deviled Eggs
My youngest son calls these “doubled” eggs! So, that’s what we call them too. My favorite tip to make deviled eggs is to place all the ingredients in a plastic zippered bag.
Then, zip close and mix the ingredients together until they are well combined. Then, snip one corner of the bag off and pipe the filling into the eggs. Of course, garnishing it with a little paprika for pizzazz.

Ingredients
- 6 hard boiled eggs,
- 6 Tablespoons mayonnaise
- 2 Teaspoons yellow mustard
- 2 teaspoons vinegar
- Salt & pepper to taste
- Paprika garnish
Instructions
- Hard boil eggs and once cooled, peel. Slice in half, separate the yolk and egg white. Place the egg white in a dish for later.
- Combine the egg yolk, 6 T. mayonnaise, 2 tsp. mustard, 2 tsp. white vinegar, and a dash of salt and pepper. Place in a zippered bag and seal.
- Mix together the ingredients in the bag.
- Snip a small piece of one corner and pipe filling into the egg white.
- Garnish with paprika.
