Ground beef is very versatile – not as fatty as pork and more nutritious than chicken.

I think you will definitely have a couple of eggs, water, ketchup, and bread crumbs to cook classic and beefy meatloaf soon!

If you love ground beef, you can use it in other recipes like Stuffed Pasta Shells, Tex-Mex Meatballs, and Ground Beef Enchilada Casserole.

Meatloaf Ingredients

  • Ground beef – I prefer using lean ground beef for a healthier meal.
  • Eggs When baking, the egg white holds the meat mixture together and prevents it from falling apart, and the yolks add moisture.
  • Water The breadcrumbs will absorb it making the meatloaf moist. it completely. You can also use milk
  • Ketchup You can try replacing it with tomato paste or barbecue sauce.
  • Breadcrumbs, they add volume to the meatloaf as well as help retain moisture.
  • Spices Lipton onion soup mix, ground mustard, garlic powder, and paprika.
  • Onion and garlic – they are also important for flavor and aroma.

  4. Line a baking dish with foil, add minced meat mixture, and shape it into a log. Place in preheated oven and bake for about 1 hour and 15 minutes. Or until the outside is crispy. It is not necessary to cover the top with foil, there are many liquid ingredients in the mixture. If they cannot evaporate, then your meatloaf will be boiled but not baked.

Meatloaf lends itself well to freezing and later use.

After baking, cool it down, fold it into a large sealed container with a lid, or carefully wrap it with foil in 2-3 layers and put it in a freezer.

Allow it to thaw overnight in the refrigerator before use.

To serve, preheat it in the oven or microwave, and cover it with ketchup and herbs.

Recipe Tips:

  1. Cooking the meatloaf in a wide baking dish or on a baking sheet allows a crispy crust on all edges. Baking in a bread pan will keep the edges moist.
  2. Meatloaf slices can be reheated in a skillet-like cutlet on both sides.
  3. Leftovers can be used for sandwiches.

Answering Your Burning Questions:

Can I make meatloaf ahead of time?

Yes of course! After baking, let the meatloaf cool completely, then wrap it in foil or cling film and refrigerate.

The shelf life in the refrigerator is about three days.

Preheat before serving in the oven or microwave, top with ketchup, sprinkle with fresh herbs, and serve hot.

What is the secret to the best beefy moist meatloaf?

Lean minced meat can play a cruel joke on us and we will get dry steep meatloaf.

So, the fat content should still be present in a ratio of 1:10 (where 1 is fat and 10 is meat).

For the moisture of the meatloaf, we add ketchup (you can substitute tomato paste for it) and water.

Breadcrumbs absorb all this into themselves and in the end, we get a juicy dish.

Feel free to experiment and add other juiciness ingredients to your liking. This can be mustard, Worcestershire sauce, or barbecue sauce.

Recipe Variations

  1. Prepare the meatloaf with Lipton onion soup mix using the entire pack of dry mix, replacing the pepper mix.
  2. Cover the meatloaf with barbecue sauce or salsa instead of ketchup.
  3. Replace the bread crumbs with torn white bread soaked in milk or cooked rice.
  4. Add finely chopped or grated vegetables (carrots, zucchini, mushrooms).

Do you bake meatloaf covered or uncovered?

There is already a lot of liquid in this whole meat mixture.

If you cover it with foil when baking, you run the risk of a boiled meatloaf rather than a baked one.

Thus, I recommend leaving it uncovered on top to allow excess liquid to evaporate.

How do you keep the meatloaf from falling apart?

The function of bonding in this recipe is performed by eggs.

If you see that the mixture is watery and does not hold its shape well, add an extra part of minced meat or bread crumbs.

I bake the meatloaf in a deep baking dish. But you can also use a bread pan.

FAQs

Why milk instead of water in meatloaf? ›

Is it better to add milk or water in meatloaf? Without question, it is better to use milk in meatloaf. The added fat adds richness and moist texture to the meatloaf, and the added milk proteins encourage additional browning reactions (which means more flavor).

Should onions be cooked before adding to meatloaf? ›

The answer is: it depends. Onions are a great addition to meatloaf because they add a lot of flavor and moisture. Raw onions have a strong, pungent flavor and will give the meatloaf a sharper taste. However, if the onions are cooked before adding them to the meatloaf, they will become sweeter and milder.

Do you need to cover meatloaf while baking? ›

Should I cook my meatloaf covered or uncovered? The meatloaf can be cooked uncovered. However, if you are concerned about it burning, you can cover the meatloaf with foil for the first 45 minutes and uncover it for the final 15 minutes to allow the meatloaf to brown on top.

Can I use onion powder in place of onion in meatloaf? ›

Onion powder's smooth consistency makes it the perfect additive to texture-heavy meals like meatloaves or casseroles. Onion powder is a great substitute for onions in this recipe. Meatloaf and casseroles already have so much going on, adding in one more ingredient can be what pushes it over the edge.

What is the secret to a great meat loaf? ›

Use high-fat meat.

For a meatloaf made with a leaner beef or turkey, consider mixing in some ground pork and/or veal in order to achieve a moist, tender meatloaf. Chopping up bacon and adding it to the mix is always a great way to add fat. Oh, and covering it in bacon never hurts, either.

What does adding an extra egg to meatloaf do? ›

Eggs Add Structure

Egg yolks, which are mostly water but contain a good amount of protein and fat, add flavor, richness, and moisture. They also help bind the meat together and get the loaf to set in a stable form without the need to overwork the meat.

What ingredient keeps meatloaf from falling apart? ›

In meatloaf, this is most commonly the eggs and breadcrumbs. Your binding ingredient is only second to the meat itself in your recipe and the reason why meatloaf crumbles. When this happens, it's because you didn't use enough. Next time, try adding in an extra egg and/or some more breadcrumbs.

What is the basic meatloaf formula? ›

The Basic Meatloaf Formula

All recipes for meatloaf start with the same basic formula: 2 pounds of ground meat and a “panade” made of bread or crackers soaked in milk. Along with a few eggs, this panade helps to hold the ground meat together and adds some essential moisture to the mix.

Is it better to bake meatloaf in glass or metal? ›

Because glass is an insulator, rather than a conductor, it's slow to heat but, once hot, retains that heat for longer. This can result in uneven baking: By the time the interior is baked through, the exterior is often overcooked, dry, or dark.

Is it better to cook meatloaf at 350 or 375? ›

The oven temperature is typically set at 350 degrees F for making meatloaf. That's the temperature you want to be sure to use so the meatloaf cooks and doesn't dry out. Too high, and the outer crust will burn before the interior is cooked all the way, too low and you don't get that delicious crust.

Can you cook meatloaf in a glass loaf pan? ›

Press mixture in ungreased 8-inch round (1 1/2-quart) glass baking dish. Bake at 350°F. for 65 to 75 minutes or until thoroughly cooked in center and meat thermometer registers 160°F.

What can I use in meatloaf instead of breadcrumbs? ›

Crackers. Crushed-up crackers make an excellent bread crumb substitute in baked dishes like meatballs or meatloaf. The crackers work just as well as the bread crumbs to hold the meat mixture together, and using varieties like salty saltines or buttery Ritz is a great way to add an extra burst of flavor to your dish.

What is traditional meatloaf made of? ›

No bells and whistles - just a few ingredients including beef, egg, bread crumbs and a simple tomato-based topping. Use a gentle touch with ground beef. Over-mixing will result in burgers, meatballs or meatloaves with a firm texture.

What can I use as a binding agent in meatloaf instead of eggs? ›

Arrowroot Powder. Arrowroot powder serves as a gluten-free thickening agent and binder in meatloaf recipes. Mix 2 tablespoons of arrowroot powder with 3 tablespoons of water to replace each egg and achieve a well-bound and tender texture in your meatloaf.

What happens if you don't add milk to meatloaf? ›

Milk adds richness and moisture, while the bread helps keep the meatloaf texture softer. So, omitting milk would omit some creaminess and moisture. Those can be easily subbed out by many other ingredients like chicken stock, cream, butter, etc.

What happens if you use milk instead of water in baking? ›

Yes, you may make cakes with milk instead of water. Because fat provides richness and solidity to the cake, milk can increase the cake's moisture content and flavor. 1) Use the same quantity of milk as water called for in the recipe.

What happens when you use milk instead of water in a bread recipe? ›

It adds nutritional value to baked goods. Mainly protein, calcium, and vitamin B12 which are all necessary for a heathy diet. But we don't only look for the nutritional benefits when using milk in our bread dough. The fat and lactose in milk help with tenderizing the crumb of the bread making it softer and sweeter.
